Smokin' Rooster Rotisserie Chicken

12/17/2025

Picture
Servings: 4–6
Prep Time: 10 minutes
Cook Time: 55–65 minutes
Ingredients
  • 1 whole chicken (3.5–4.5 lbs)
  • 2 tbsp Smokin’ Rooster seasoning
  • 1 tbsp olive oil or melted butter
  • Kitchen twine (if needed)

Instructions
  1. Prepare the Chicken
Pat the chicken completely dry inside and out with paper towels. Dry skin helps achieve better browning on the rotisserie.
  2. Season
Lightly coat the entire chicken with olive oil or melted butter. Sprinkle Smokin’ Rooster seasoning evenly over the skin, rubbing it in to fully coat all sides.
Optional: Add a small amount of seasoning inside the cavity for extra flavor.
  3. Truss (Recommended)
Tuck the wing tips behind the back and use kitchen twine to tie the legs together. Trussing helps the chicken cook evenly and spin smoothly on the rotisserie.
  4. Mount on Rotisserie Spit
Insert the rotisserie rod through the center of the chicken, securing it tightly with the forks so the bird is balanced and does not wobble during rotation.
  5. Preheat Appliance
Preheat the tabletop oven/air fryer to 375°F using the Rotisserie setting.
  6. Cook
Place the rotisserie spit into the oven according to the manufacturer’s instructions.
Cook for 55–65 minutes, or until:
    • Internal temperature reaches 165°F in the thickest part of the breast
    • Thigh temperature reaches 170–175°F
    • Skin is deeply golden and lightly crisp
  7. Rest
Carefully remove the rotisserie chicken and let rest for 10 minutes before carving. Resting keeps the meat juicy.

Honey Buffalo Chicken

12/17/2025

Picture
Servings: 2–4
Prep Time: 10 minutes
Cook Time: 45–55 minutes
Ingredients
  • 2–4 chicken leg quarters
  • 2–3 tbsp buffalo sauce (used as a binder)
  • 2 tbsp Sticky Chick seasoning
  • 1 tbsp olive oil or melted butter (optional, for extra crisp skin)
  • Aluminum foil or parchment paper

Instructions
  1. Preheat Oven
Preheat oven to 400°F (205°C). Line a baking sheet with foil or parchment for easy cleanup. Place a wire rack on top if available (this helps the skin crisp evenly).
  2. Prepare the Chicken
Remove chicken leg quarters from packaging and pat completely dry with paper towels. Dry skin is key for better browning and texture.
  3. Apply Binder
Lightly coat each leg quarter with buffalo sauce, rubbing it evenly over all sides. The buffalo sauce acts as a binder to help the seasoning stick and adds a subtle heat and tang.
  4. Season
Sprinkle Sticky Chick seasoning generously over the chicken, pressing it into the skin to ensure good coverage on all sides.
  5. Arrange for Baking
Place leg quarters skin-side up on the prepared baking sheet or rack. If desired, lightly drizzle or brush with olive oil or melted butter to enhance browning.
  6. Bake
Bake uncovered for 45–55 minutes, rotating the pan halfway through, until:
    • Internal temperature reaches 165°F in the thickest part of the leg
    • Skin is golden brown and slightly crisp
  7. Optional Crisp Finish
For extra crispy skin, switch oven to broil for the last 2–3 minutes, watching closely to prevent burning.
  8. Rest & Serve
Remove chicken from oven and let rest for 5 minutes before serving. This allows juices to redistribute.
